My Paleo chili

It's super cold in Texas this week and because my husband works outside in it I made chili to warm him up! He's weird and only thinks you can have chili and stews when it's cold. So here it is my Paleo chili recipe



Ingredients: 

1lbs ground beef or ground turkey 
1/2 onion 
1 can tomato paste
1 can diced tomatoes 
1 can rotel (I know not really compliant) rinsed 
2 Tbls chili powder
1 Tbls cumin
1 tsp garlic
splash of water 


What to do:

Brown beef or turkey, add in diced onion until onion is clear

Add in chili powder, cumin, garlic and splash of water

Add in tomato paste, diced tomatoes and rinsed Rotel 

Leave on burner on low until desired thickness

(You could also add in bell pepper and zucchini, when simmering.) I forgot this time... 

Top with avocado and enjoy!  





Coconut flour zucchini bread


  1. I was looking on Pinterest for a great zucchini bread recipe and came across a bunch of yummy looking ones! Next time I'm going to make a chocolate loaf... This time was trial (and alittle error)  I'll explain later... This is what I can up with after merging a few recipes


  2. Ingredients:
  3. 3/4 cup coconut flour 
  4. 3/4 tsp. baking soda
  5. 1/2 tsp. salt
  6. 1 Tbsp. cinnamon
  7. ½ tsp. nutmeg
  8. 4 eggs
  9. 3 Tbsp. raw honey 
  10. 1 cup (1 medium) zucchini, shredded
  11. 1 banana, mashed
  12. 1 Tbsp. coconut oil, extra if greasing your pan

What to do: 

Preheat oven to 350

In 1 of 2 mixing bowls shred zucchini and  all dry ingredients

In the other mixing bowl add all wet ingredients and mix with hand mixer until well blended.

Add wet ingredients to dry and mix with spatula and put into gleased loaf pan and bake for about 45 or until toothpick comes out clean



Here's what I did wrong. I have temptations stone ware that is nonstick but I did grease the pan... It's a little greasy on the bottom 😜 I also used only a half cup of coconut flour, but think more flour would make it not as eggy (is that a word?)  all in all it's yummy!

My go to snacks

Ok, I'll admit it... I snack! Like, I'm sure it's out of habit or boredom but I figure if I'm gonna do it and I make good food choices it's not bad right? 

Here are my go to snacks/ hunger busters. 



What I have here is an apple, carrots, nuts, caveman bars, larabars, tuna pouches, and fruit breaks (with coconut water)

Hey good looking, whatcha got cooking? As much as I love the holidays, I sure am ready to get back to the norm!  This is what we are planning this week! Watch for posts for Paleo chili, burgers and stew.

Monday- ribs with sweet potatoes 
Tuesday- chicken and broccoli 
Wednesday- hamburgers/ turkeyburget and fries
Thursday- Paleo chili
Friday- leftovers
Saturday- shrimp and zucchini 
Sunday- stew

How I got started


How this all got started. I was talking to a friend about being stuck in a plateau with weight loss and working out, she told me that I should do a reset with the whole 30. After looking it up and thinking wow that's going to be way too hard! Check it out here www.whole30.com I read more into it and that people with thyroid problems do better on gluten-free and/or low-carb. Now I'll admit I have done Atkins a few times, and without Too much information, when you have thyroid problems it coincides with having bowel movement problems! ( yes I know! gross!) 
So eating lots of cheese and lots of meat  it kind of stops you up! I decided and committed to doing the whole 30! I started it just in time to finish it in time for thanksgiving! I did so good, didn't cheat (even on Halloween) and then over the thanksgiving breat I binged, I gained like 8 pounds :( got right back to Paleo eating and lost it all in about a week. I'm not saying that it will happen for everyone but  if it can happen for me it sure can happen for you!       


Caveman bars




Just for the record I'm not getting paid by any company for endorsing their bars! (I wish I was) anyhow, Theses bars are so good! I don't know about you but I can't eat a big breakfast before working out. I like to just grab one of these and eat on my way! I always keep one in my purse just in case I get a hunger attack, and when that happens I don't always make smart eating decisions. These buyers are gluten-free, grain free and paleo friendly! I found them at Sam's and was afraid to buy a big box having not tried them before, but now I'm so glad I did!

Paleo for dummies (like me)





I am not claiming I know everything or even lot about Paleo eating! With that said I use Pinterest a lot and I follow thePaleomom.com and againstallgrain.com, they both have a lot of recipes and have been doing it a lot longer than I have. But this is what I have come up with when looking for anything Paleo. 

It's a lot of fresh fruit and veggies, lean meats and seafood, and some nuts and seeds. 

You basically cut out all dairy, any added sugar, any grains and all gluten, it is the back to basics primal eating! 




With every meal you were supposed to have a protein a vegetable and some kind of fat. 



I have a super picky eater, and a husband that loves bread/ pasta and beans so I always set something off the the side for me, but other then that we eat good share of chicken! I'm not a huge beef eater and I'm getting more creative with seafood! 



My sweet potato!


Oh my sweet potato! Since going Paleo I have been using a lot of sweet potatoes, instead of regular potatoes. The other day I diced up a sweet potato smeared a little coconut oil on some foul and wrapped it up and tossed it in the oven along with diced up chicken wrapped up in foil and baked at 400° for about 30 minutes. After it comes out of the oven I sprinkle some cinnamon on my sweet potatoes and season my chicken with garlic salt and pepper. Yum! 



Paleo lunch!



Needing an idea for a quick Paleo lunch? Cut a chicken breast into chunks, add a little coconut oil to a skillet and toss in your chicken! I use a lot of leftovers from the night before, we had some cucumber salad left over so I used that. And I also keep on hand zucchini and yellow squash so I can taste those up and throw those in the skillet after the chicken! 



Salmon fillet salad!


One of my most favorite salads! Salmon fillet on power greens and Romain lettuce, sprinkle a little lemon pepper and a little basaltic vinegar and a splash of lemon!

Well hello there and welcome to my new blog! I have been blogging for about five years but took a Break for a while. To share a little more about me, my name is Christi I live in a small town in Texas. I have been married to my husband for 10 years now, we have two crazy kids together, and I've been into fitness/weight loss for about three years now. I have a very messed up thyroid that we had to figure out before any of my weight would come off! (talk about frustrating) I have been following a Paleo diet starting with the whole 30 about two months ago (I'm still learning) I love the way that it makes me feel and takes away all the bloatedness! I love Pinterest (and pin way too much) I love to share new recipes, and come up with new foods! I hope you enjoy reading all of my fun, off-the-wall, and crazy stuff!
