Good morning! I've never really been a breakfast fan, I'm never really been an egg fan...as long as something is mixed into my eggs I will eat them! Last night for dinner we had stuffed bell peppers, and I have a little bit of ground beef leftover, so after my workout I threw the ground beef in a pan let it get warm put my eggs in one time and tell they were done added some guacamole and salsa. Bam! You have yourself a Southwest breakfast scramble!

Dinner idea
I have to admit sometimes it's hard to come up with dinner ideas because my family isn't on the whole Paleo idea (yet)
My husband is okay with eating meat and a veggie but always wants something else on the side, I just always skip that something else. The other night I made salmon and asparagus, it was so good!

Kale chips
This is new to us! I've seen lots of ways to make these, I used garlic and chili powder with some extra virgin olive oil and then turned on the oven to 400° let it pre heat and then turned it off and put in the cookie sheets for about 20 minutes

Hamburger/ turkey soup
1 bottle tomato/ vegetable juice
1 pound ground turkey or hamburger
2 large potatoes
2 zucchini
1/2 onion
1 large can green beans
1 large can diced tomatoes
Brown turkey/ hamburger
Put into crockpot add all veggies and cook 6 hours, you can also make on the stovetop

Tex-Mex potatoes
This is a revisit from awhile ago... I'm making it for supper tonight! It's kinda chilly today so this will be a nice comfort food!
1lb hamburger/ ground turkey
1 can rotel
1/2 onion
Taco seasoning
4 potatoes
Brown one pound of hamburger/turkey, add taco seasoning, add in onions and a can of rotel. In a separate pan diced potatoes and semi pan fry your potatoes, only used a splash of oil, add both pans together and let simmer.
Top with hot sauce and guacamole, boys had cheese on top
The boys are gonna have ranch style beans along side!
It was a quick filling meal! Yum!

That's not one of these posts... We had a very low-key, iced in, Watch movies with the kids Kinda night. We made burgers, everyone had red velvet cake (I didn't touch it) And had snackfood!

My Paleo chili
It's super cold in Texas this week and because my husband works outside in it I made chili to warm him up! He's weird and only thinks you can have chili and stews when it's cold. So here it is my Paleo chili recipe
Ingredients:
1lbs ground beef or ground turkey
1/2 onion
1 can tomato paste
1 can diced tomatoes
1 can rotel (I know not really compliant) rinsed
2 Tbls chili powder
1 Tbls cumin
1 tsp garlic
splash of water
What to do:
Brown beef or turkey, add in diced onion until onion is clear
Add in chili powder, cumin, garlic and splash of water
Add in tomato paste, diced tomatoes and rinsed Rotel
Leave on burner on low until desired thickness
(You could also add in bell pepper and zucchini, when simmering.) I forgot this time...
Top with avocado and enjoy!
Coconut flour zucchini bread
- I was looking on Pinterest for a great zucchini bread recipe and came across a bunch of yummy looking ones! Next time I'm going to make a chocolate loaf... This time was trial (and alittle error) I'll explain later... This is what I can up with after merging a few recipes
- Ingredients:
- 3/4 cup coconut flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. cinnamon
- ½ tsp. nutmeg
- 4 eggs
- 3 Tbsp. raw honey
- 1 cup (1 medium) zucchini, shredded
- 1 banana, mashed
- 1 Tbsp. coconut oil, extra if greasing your pan
What to do:
Preheat oven to 350
In 1 of 2 mixing bowls shred zucchini and all dry ingredients
In the other mixing bowl add all wet ingredients and mix with hand mixer until well blended.
Add wet ingredients to dry and mix with spatula and put into gleased loaf pan and bake for about 45 or until toothpick comes out clean
Here's what I did wrong. I have temptations stone ware that is nonstick but I did grease the pan... It's a little greasy on the bottom 😜 I also used only a half cup of coconut flour, but think more flour would make it not as eggy (is that a word?) all in all it's yummy!

My sweet potato!
Oh my sweet potato! Since going Paleo I have been using a lot of sweet potatoes, instead of regular potatoes. The other day I diced up a sweet potato smeared a little coconut oil on some foul and wrapped it up and tossed it in the oven along with diced up chicken wrapped up in foil and baked at 400° for about 30 minutes. After it comes out of the oven I sprinkle some cinnamon on my sweet potatoes and season my chicken with garlic salt and pepper. Yum!
