Menu plans {1/25/15}

Normally I like Mondays, let me rephrase that I don't mind Mondays! Not today, it's  definitely a Monday... This weekend wasn't great, missed our movie, dropped my phone in the toilet, missed a birthday... The list can keep going! Anyhow on to a new week, this is what we're having this week

Monday- chicken and sweet potato
Tuesday- tacos
Wednesday- sausage and potatoes 
Thursday- speghetti 
Friday- monster bash, daughter date 
Saturday- stew
Sunday- Super Bowl! Go Seahawks

Southwest breakfast scramble




Good morning! I've never really been a breakfast fan, I'm never really been an egg fan...as long as something is mixed into my eggs I will eat them! Last night for dinner we had stuffed bell peppers, and I have a little bit of ground beef leftover, so after my workout I threw the ground beef in a pan let it get warm put my eggs in one time and tell they were done added some guacamole and salsa. Bam! You have yourself a Southwest breakfast scramble!

Dinner idea


I have to admit sometimes it's hard to come up with dinner ideas because my family isn't on the whole Paleo idea (yet)

My husband is okay with eating meat and a veggie but always wants something else on the side, I just always skip that something else. The other night I made salmon and asparagus, it was so good! 

Excuse me while I rant...

I just tried for my third attempt to make Paleo pancakes... Fail!!!! They didn't taste good, and they didn't look good. Every part of me wants to go eat everything bad for me! 

I apologize for the rant but I am human and a woman, I started this whole Paleo diet because of my thyroid. I have struggled for years to lose weight and was told Paleo was the way to not only lose weight but get my thyroid function on track. 

I came across a list of non-friendly thyroid foods (some of which I already knew) but did want to share!



Veggies

•Broccoli

•Kale
•kohlrabi 
•Mustard greens 
•rutabaga
•turnips
•Radishes
•Spinach

These steal your iodine from your thyroid,  cooking them does help

Menu plans {1/19/15}

I hope everyone had a great weekend! We ended up going to Austin for the weekend and hanging out with our cousin! So we didn't really stick to the menu. We are out of school today so we have been running around most of the day! This is what we are having this week

Monday- chicken fajitas
Tuesday- ribs and sweet potatoes
Wednesday- garlic shrimp scampi
Thursday- stuffed bell peppers 
Friday-  patents night out
Saturday- homemade chicken strips
Sunday- chicken casserole

Menu plans {1/12/15}

Good Monday morning! Wow how things can change, last week my daughter got grounded the day before her birthday so other than a family get-together she didn't get to have a birthday party,. It was great for me because I didn't have to have more cake and temptations in my house... This week is my birthday so hopefully it won't be as bad!


Monday- barbecue chicken sandwiches
Tuesday- paleo meatloaf
Wednesday- stuffed bell pepers
Thursday- birthday dinner/ steak
Friday- garlic shrimp scampi
Saturday- homemade chicken strips
Sunday- cilantro lime chicken

Kale chips

This is new to us! I've seen lots of ways to make these, I used garlic and chili powder with some extra virgin olive oil and then turned on the oven to 400° let it pre heat and then turned it off and put in the cookie sheets for about 20 minutes
