Menu plans {1/12/15}

Good Monday morning! Wow how things can change, last week my daughter got grounded the day before her birthday so other than a family get-together she didn't get to have a birthday party,. It was great for me because I didn't have to have more cake and temptations in my house... This week is my birthday so hopefully it won't be as bad!


Monday- barbecue chicken sandwiches
Tuesday- paleo meatloaf
Wednesday- stuffed bell pepers
Thursday- birthday dinner/ steak
Friday- garlic shrimp scampi
Saturday- homemade chicken strips
Sunday- cilantro lime chicken

Kale chips

This is new to us! I've seen lots of ways to make these, I used garlic and chili powder with some extra virgin olive oil and then turned on the oven to 400° let it pre heat and then turned it off and put in the cookie sheets for about 20 minutes

Hamburger/ turkey soup




1 bottle tomato/ vegetable juice 
1 pound ground turkey or hamburger 
2 large potatoes
2 zucchini 
1/2 onion 
1 large can green beans 
1 large can diced tomatoes 

Brown turkey/ hamburger 
Put into crockpot add all veggies and cook 6 hours, you can also make on the stovetop

Menu Plans {1/5/15}

It's Monday and back to school for us!  It's going to be a crazy week for us as my daughter is turning the big 10! so lots to do and no time to do it in! Some of these meals I'll have to either have something else or make it better for me!

Monday- BBQ chicken, zucchini
Tuesday-  hamburger soup
Wednesday- Chicken and dumplins (It's her favorite!) I'll have something else
Thursday-  meatloaf, mashed taters and corn
Friday- Chicken fajitas
Saturday- Party time! Pizza!
Sunday- beans and cornbead

Tex-Mex potatoes

This is a revisit from awhile ago... I'm making it for supper tonight! It's kinda chilly today so this will be a nice comfort food!



1lb hamburger/ ground turkey 
1 can rotel
1/2  onion
Taco seasoning
4 potatoes 


Brown one pound of hamburger/turkey, add taco seasoning,  add in onions and a can of rotel. In a separate pan diced potatoes and semi pan fry your potatoes, only used a splash of oil, add both pans together and let simmer. 

Top with hot sauce and guacamole, boys had cheese on top

The boys are gonna have ranch style beans along side! 

It was a quick filling meal! Yum!

That's not one of these posts... We had a very low-key, iced in, Watch movies with the kids Kinda night. We made burgers, everyone had red velvet cake (I didn't touch it) And had snackfood!
